Trained in Tokyo with over 20 years of experience, Chef Inoue is the former chef-owner of Sushi Inoue in New York—Harlem’s neighborhood’s first Michelin-starred Japanese restaurant. He is known for refined Edomae techniques, Toyosu-quality fish, and an omakase style rooted in purity and balance.
He is also a certified wine & sake sommelier, bringing thoughtful pairings to elevate each course.
And beyond the counter, he’s a warm, funny soul who adores his two cats.
We’re honored to share his craft with you.

As the original mind behind Rakki, he brings not only skill, but a vision:
