Last week, I walked back into the kitchens of The Breakers Palm Beach for the first time in more than four decades. Not as an apprentice this time — as the chef I became.

On February 6, 1982, I started my culinary apprenticeship there. What I learned in the 6,000 hours that followed shaped the rest of my life and became the foundation of everything I’ve built since.
