Maybe coffee is not a love at first taste for many people, some might find it too strong, or too bitter 🤷
But once you get to your ideal taste (if you haven't don't give up, and keep trying!), there is no turning back ☕
Coffee is a great companion! It stays with you in the good, the bad, and the daily routines of life 😊
One of the best things about having embarked on this coffee journey is the opportunity we've had to learn about the many different ways of brewing our coffee. And even when there are certain standards in the specialty coffee industry about how we should have our coffee, the truth we've learned is:

Roast it, pack it, drink, repeat! ☕
A bit of the process we follow with every new batch of coffee we roast 🤎
It looks so simple once it is ready to ship, but it takes a bit of work and experience to get it right! 😍

Latte art is a visual compliment, a personal touch that aims to show an appreciation for coffee and attention to detail ✨
It sure looks pretty for pictures on social media too 😂 But anyone who masters this art went through a lot of practice to earn their skills, and that is one of the reasons why it's one of the most recognized symbols of our coffee culture 🤎
The quality of the art is constantly improving, and there is a lot of innovation across the world (there is even a World Latte Art competition!) 🌎
This is why we're mesmerized every time a barista does their magic. It didn't happen overnight, it is the result of a lot of training and patience. As if they were paying a tribute to all of the people that were involved in delivering that coffee to us ☕

Did you know the term Specialty Coffee was first used in the 1970s by Erna Knutsen - as known as the Queen of Specialty Coffee?
According to the Specialty Coffee Association (SCA), this is what Erna meant while using the term:
"Special geographic microclimates produce beans with unique flavor profiles, which she referred to as ‘specialty coffees.’ Underlying this idea of coffee appellations was the fundamental premise that specialty coffee beans would always be well prepared, freshly roasted, and properly brewed."
The base of that concept is what has made the Specialty Coffee industry as we know it today, and it is of course, still evolving.
Specialty coffee must assure the preservation of the quality of the coffee beans at each stage of the coffee production.
Coffee is unlike any other beverage. The final experience we get in our cup is dependent on the work of a bunch of key players in the coffee production. From the farmer to the roaster or brewer, every step must follow its own specialty process in order to assure the quality we know Specialty Coffee delivers.
