‘Constant evolution’ - one of our motto’s for the restaurant. We ask ourselves everyday how we can get just .25 percent better than the previous day. Constantly pushing ourselves. Constantly questioning everything. It’s all about the little details.

Getting that focaccia ready… Our go focaccia is made with freshly milled yecora rojo wheat and is such a high hydration that we barely touch it, except for some folds that you see here. We let the wheat, water and our sourdough leaven do all of the work which translates to a crispy on the outside and incredibly fluffy and light inside focaccia.

Breads & Spreads - Yecora Rojo Focaccia, Rouge de Bordeaux Sourdough, Koji Cultured Butter, Eggplant & Goat Cheese Spread, and Whipped Ricotta with Summer Herbs and Miguel Bode’s Honey
We search high and low to get the best products we can for the restaurant. For our breads we get in whole berries of Yecora Rojo and Rouge de Bordeaux and mill it at the restaurant the same day that we make the bread. There is simply no substitute for the flavor you get from freshly milled wheat. It’s a big extra step we take to make sure you are getting the best most flavorful sourdough and focaccia we can make.
