Inside the Cellar… 🍷
Some bottles tell a story long before they’re opened. The Gaja 1971 Sorì Tildìn Barbaresco is one of the most iconic wines to come out of Piedmont, Italy, produced by the legendary Gaja family from 100% Nebbiolo grapes. Released during what’s considered a landmark vintage, it remains one of the standout bottles in our cellar today.
For Thomas & Kassidy Angelo, wines like this carry an even deeper meaning. The Angelo and Gaja families have shared a friendship spanning more than 15 years, with memorable dinners, wine experiences, and moments shared together along the way, including several Gaja wine dinners hosted throughout their restaurants, making bottles like this feel especially personal within our collection.
Swipe to hear from our Wine & Beverage Director, Daniel Bishop, on what continues to make this bottle so special decades later. 🍷

A Taste of the Conch Republic at Daniel’s - One of our signature creations is a spirited tribute to the sun-drenched flavors and effortless freshness of the Florida Keys.
The dish is an ode to our Culinary Director .ganem’s time at the helm of the 3-Michelin Key-rated Little Palm Island: his legendary Foie Gras Crème Brûlée. “It’s a whimsical allegory of the sea,” says Ganem. "The represents the island itself. The waves are coconut powder, crashing into a 'shore' of toasted coconut, mango, and cashew 'rocks.' A sensory story of paradise." 🥭🥥
