Both teams will be cooking side by side and putting out a special à la carte menu built around fermentation, Japanese technique, and seasonal ingredients. It’s not a tasting menu, it’s a night to explore the menu, share dishes, and try things you won’t normally see at either restaurant. Our Tomato Salad is anything but simple.
Heirloom tomatoes from California and baby tomatoes from Florida, thoughtfully sourced through with smoked olive oil and smoked Maldon salt. Layered with tomato dashi gelée, whipped shiro miso tofu, and a rotation of seasonal greens, vegetables, and fruit.
Finished tableside, tomato koji vinaigrette and Thai basil oil are poured, then sealed with a mist of koji water.
It’s precise. It’s layered. It’s a study in tomato at its finest. 🍅
