Did you know The Pickled Beet operates out of a dedicated gluten-free kitchen? We know well that gluten isn’t a necessary ingredient for delicious, nutritious food, and so on this National , we wanted to share a few facts about celiac disease, gluten-free food, and our kitchen:

✅ Celiac disease affects an estimated 1 in 100 people globally, according to the Celiac Disease Foundation, but as many as 80% of those cases go undiagnosed or are mistaken for something else.

✅ There's currently no medication or cure for celiac disease. The only treatment is a lifelong, strict gluten-free diet, which is why we built our kitchen the way we did.

✅ If a parent, sibling, or child has celiac disease, your risk of developing it increases to 1 in 10, so awareness in families matters as much as awareness in kitchens.

✅ If you’ve been a client of ours and don’t have issues with gluten, you likely didn’t even realize you were eating gluten-free with us. Why? Because whole, real food, unprocessed ingredients don't contain gluten.

And, what about our clients who do not eat gluten free? We have a small area outside of our main kitchen where we are able to prepare conventional foods.

That means every client – whether they're managing celiac disease, gluten-intolerance, another health condition, or simply here for delicious healthy meals – gets the same personalized, organic, thoughtfully-sourced food cooked with the same care and attention to detail.

Food has a special way of making a memory – the way a familiar dish can feel like coming home, the conversations that happen over a shared table, the satisfaction of a meal made just right. It's one of the reasons we love what we do, and after more than 20 years of cooking for people across South Florida, it never gets old.

Today, on "I Love Food Day," we're celebrating the magic of good food and the fact that we get to help create these moments for our clients. Every dish we make is shaped around the person eating it, including their health needs, their dietary restrictions, and their personal taste. Earlier this summer, our founder, Elizabeth Willard, sat down with Adam Beach and Rick Buffkin for the Two Plane Guys podcast to discuss what it actually takes to deliver an elevated catering experience for guests at 40,000 feet.

We know that a private flight boarding bite, main course, or dessert isn’t just about the plate; it's also about timing, trust, and crafting delicious experiences that cabin attendants can serve flawlessly with little time and minimal space.

Two days, an incredible team, and so much beautiful, thoughtfully-made food!

Last week, The Pickled Beet’s kitchen turned into a full production studio with Eleven Photography Agency behind the camera and Thrive PR art directing. They captured the beauty of our dishes and the all-star team that makes everything happen.

Hands moving, sauces flowing, and garnishes perfectly-placed – enjoy this rare peek behind our kitchen doors. Chef JC brings his Michelin-star experience to every plate. Chef Kerrine's Le Cordon Bleu training shows in every detail. Chef Buddha’s heart and joy are behind every dish. And our support team (Nicole, Jen, and Rolando) not only ensures a smooth operation but keeps everyone laughing.

It’s this care that goes into every meal we make, every private flight we cater.

Say hello to Chef Kerrine Joseph, the newest addition to The Pickled Beet kitchen!

Kerrine has spent more than ten years in professional kitchens perfecting the art of a menu that's both beautiful and nourishing. A Le Cordon Bleu-trained chef with a background crafting custom menus for private events, she's spent her career finding the sweet spot between elevated presentation and real, thoughtfully prepared ingredients.

At The Pickled Beet, she develops personalized weekly menus for our clients, bringing her eye for detail and love of innovation to every dish that leaves the kitchen.

Our founder, Elizabeth Willard, was invited to spend an afternoon alongside Florida's sharpest CEOs and founders at Influential Executive Women’s Leadership Live! Fort Lauderdale, and she came back with more than a few new ideas for The Pickled Beet.

One session that stuck with her: Ella Davar, RD (author of The Gut-Brain Method and President of the Global Longevity Association) broke down how gut health and brain health are more connected than most of us realize. Her presentation touched on research that shows how gut imbalances are linked to brain fog, mood, and long-term cognitive health – and how anti-inflammatory, whole-food meals can help support that connection every day.

This is the same philosophy The Pickled Beet has built its services on for 20+ years: scratch-made, real, organic, wild-caught, and grass-fed ingredients, personalized for each individual client. Hearing the science laid out so clearly was a great reminder of how food is medicine, and it's exactly why we're so excited about the MIND-diet-inspired recipes currently in development in our kitchen.

Liz also connected with Tammy Triolo (author of The Empathy Gap, CEO of PCQ Consulting) and Stefanie Hingley (CEO, Inner Edge Coaching), two leaders whose work on empathy and mindset resonated deeply with how we think about hospitality and care.

A graduate of Le Cordon Bleu College of Culinary Arts with more than a decade of professional experience, Chef Kerrine brings exceptional creativity, personalized menu development, and a passion for delivering memorable culinary experiences.

Throughout her career, she has created custom menus for private events and catered to a wide range of clients, combining beautiful presentation with fresh, thoughtfully prepared cuisine.

At The Pickled Beet, Chef Kerrine will help design personalized weekly meal programs while supporting our private chef services, catering, and luxury in-flight dining.
