Simple scrambled eggs- butter, salt, and pepper.

It depends on the season and my mood, but I always find joy in preparing sauteed pasta dishes.

Q. What brought you to The Pickled Beet originally, and what made you say “yes” to the role?

The opportunity to work in the culinary field at a high level, while abandoning the long nights and physical demands of restaurant work.

Q. Looking back, what do you remember most about your very first day in the kitchen?

I remember seeing the empty spaces in the brand new kitchen and envisioning them full of high-quality ingredients and spices, and looking forward to working with them to prepare excellent meals.

Learning to quickly adapt and adjust to clients' developing and changing dietary needs.

Congratulations to our very own Client Services Specialist, Nicole Gates (pictured here holding flowers), who was recognized last night as a 2026 Honoree at the “Chucks & Cocktails: When Women Lead” event in Miami.

The event brings together civic leaders, changemakers, and community champions to celebrate, network, and discuss leadership, authenticity, and purpose. The dress code often involves pairing Converse sneakers ("Chucks") with cocktail attire, aiming for a fun, accessible, and high-energy atmosphere that highlights "unsung heroes" and women doing impactful work in their communities.

As The Pickled Beet’s Client Services Specialist, Nicole serves as the primary point of contact for all our clients and their services – from weekly personal chef services to private chef experiences to private jet catering and more. She also serves as our Community Liaison and coordinates The Pickled Beet’s participation in community events.

Before joining The Pickled Beet, she was the Regional Branch Manager for European wine distributor PRP Wine International and President of Overtown Media. Additionally, in partnership with Chef Karim Bryant, she launched Lil Greenhouse Grill in Miami in 2017, a healthier alternative to soul food.

ELIZABETH WILLARD, FOUNDER & CEO
The Pickled Beet wouldn’t exist without Chef Liz, who left a corporate job 20 years ago to follow her culinary dreams. Through the years, she has gained loyal clients, accolades, and awards. She has also built a team of experienced, talented professional chefs who scratch-cook every meal in our dedicated gluten-free commercial kitchen in Miami. Liz is passionate about food as medicine and is dedicated to ensuring that each client has a delicious experience, no matter their food allergies or special dietary needs.

JEN MCCOOL, KITCHEN MANAGER
Jen is an integral part of our quality control processes and brings her vast experience in the culinary industry to our kitchen operations. She oversees all the packaging of our freshly cooked food and delivery operations, ensuring that each client receives the right meals without fail. That’s no easy task in a busy kitchen where we craft fresh, customized meals and menus for each client (often different meals for each person in the household, due to differing food preferences, food allergies, and/or medical diagnoses). On top of all that, her positive vibe and upbeat personality keep the kitchen staff humming and happy, even on the longest cook days!!

ANDREA SPRAGUE, CERTIFIED NUTRITIONIST
Andrea is a certified Nutritional Therapy Practitioner AND a Professional Chef – the perfect combo for her role as our Nutrition Consultant. She helps clients who are newly diagnosed with food allergies, autoimmune disorders, and other health conditions that require them to change their diets radically. She also uses nutrition to help clients recover faster after surgery and lessen symptoms from autoimmune diseases and cancer treatment. Andrea’s mission is to help people live their best lives, focusing on the role nutrition plays in their overall well-being.

NICOLE GATES, CLIENT SERVICES SPECIALIST
Nicole serves as the primary point of contact for all our clients. She tracks the unique food needs and travel schedules of our ongoing personal chef clients, books private chef experiences, and manages private flight catering orders. She also serves as our Community Liaison and coordinates participation in community events. Nicole’s broad background – which ranges from media to management of a European wine distributor region – is an asset to both our team and our clients!
