Inspired by the abundance of late summer, fattoush began with farmers in Lebanon frying yesterday's bread in olive oil and tossing it with whatever the fields had given them. Ours keeps the idea with lots of crisp vegetables, torn herbs, pita, and a pomegranate vinaigrette that pulls it together.
