Zak The Baker Bread & Pastry

We’ve been baking for Whole Foods Market for over 12 years. It started with three stores, a few loaves of bread, and daily deliveries from our bakery. Today, we bake 10 different breads and different 7 pastries for 21 Whole Foods Market locations across South Florida.
We’re proud of that growth, but even more grateful for the relationship behind it.
There’s something special about a small, independent bakery and a company the size of Whole Foods working together, side by side, for more than a decade. The big and the small. The corporate and the independent. A national chain and a one-shop bakery. Growing together while allowing each other to remain who we are.
Today marks another milestone in that relationship.
Our full Whole Foods bread and pastry selection can now be ordered through Amazon for same-day delivery, from Palm Beach County all the way down to Dadeland and Doral.
And while the reach keeps getting bigger, the way we make it remains remarkably small.
Everything is still mixed, shaped, cold fermented with pure sourdough and baked in our one bakery in Wynwood. Every morning, our team loads the trucks and delivers it ourselves to each store.
12 years, 21 stores, and a lot of bread later, we’re still baking it the same way.
Thank you, South Florida, for supporting us all these years. We hope this new Amazon ordering option makes it a little easier to get our bread and pastries from Whole Foods Market onto your table.

Mango Custard Tart
After receiving over 300 pounds of local mangos in the first week of Mango Trade, we’ve begun processing them and working them into every corner of the menu.
First up: Mango Custard Tart.
Bright local mango, silky custard, and a crisp tart shell, available by the slice at the bakery. Full tarts available upon request.

Why do I keep preaching about local in Miami? Because Miami is a young, impressionable city that’s often misunderstood, and is at a major inflection point.
Miami doesn’t have hundreds of years of rich history and culture to guide us as we grow from a small city, to a large city, to a major city. So the question I’m curious about is, “what kind of city do we want to become?” A replica of NYC? LA? A place where established restaurants open their 2nd and 3rd location? A place where restaurant groups open “concept” after “concept?”
I’m grateful for all the attention and appreciation Miami is getting from the major cities around the world, I think it’s wonderful, but I would ask folks from out of town a similar question, “What kind of city do you want Miami to become?” You want to come visit Miami and eat at the same exact places you eat at in NYC? Same flavors? Same atmosphere? Same people? Want to import the water to make bagels? Import designer to build out the spaces? Import the culture to build out the city?
I imagine most people would say “no.” I imagine most people don’t want to see Miami become dominated by national franchises that homogenize our culture into a sterile shell of itself. I imagine most people are proud to see local brands sprout out of our limestone soil and grow into iconic Miami establishments. If any of this resonates with you, than you understand why I think it’s important to support your local chef, farmer, independent business owner, and discourage opportunists from colonizing our story, by nourishing the culture we do want to see.
Miami’s Local Dinner last night was a celebration of Miami Chefs, Miami Food, Miami Culture. Thank you Chefs , thank you farmers, thank you guests, and thank you for trusting us to step out of the box and try something new.

A Tribal Holiday starts at sundown tonight, and finishes when you can see three stars in the sky Tuesday night. Bakery will be closed Monday and Tuesday, back open Wednesday morning.

For those who don’t know, Education pays poets to teach workshops in communities where high-quality creative writing instructions is not guaranteed. AMEN to that. Proud to be teaming up with such a righteous and beautiful initiative.

To get to the cafe at NW 26th Street in Miami, you can take the Metrorail and get off at the Civic Center Station. From there, you can take a bus that goes towards NW 2nd Ave & NW 26th St and get off at that stop. The cafe is just a short walk from there.
If you're driving, you can park along the street or in one of the nearby parking lots. Be aware of any parking restrictions in the area as some areas may be designated for residents only or have time limits on parking.
