1 clove garlic, minced

For the Miso Peanut Broth:

1 tbsp curry paste (or chili paste)
1 tbsp white miso paste
1�2 tbsp peanut butter
2 tbsp soy sauce
1 tbsp brown sugar
3 cups water or broth
1 can (400ml) coconut milk

For the Noodles & Toppings:

200g ramen noodles
1/2 cucumber, thinly sliced
Fresh cilantro or green onions
Chili flakes or chili oil (optional)
Instructions:
Prepare the tofu: press to remove excess moisture, then crumble or break into small pieces.
Heat oil in a pan and cook the tofu for 10�12 minutes until golden and slightly crispy.
Add garlic and teriyaki sauce, cooking until the tofu becomes sticky and caramelized. Set aside.
In a pot, combine curry paste, miso, peanut butter, soy sauce, and brown sugar.
Add water or broth and coconut milk, then bring to a gentle simmer. Stir until smooth and creamy.
Cook the ramen noodles separately according to package instructions.
Assemble the bowls: add noodles to each bowl, pour over the hot broth, and top with crispy tofu and fresh vegetables.
Finish with herbs and optional chili oil for extra flavor.
