When Nicolas Ruiz G] first mentioned he wanted to do a squid crudo, we were hesitant. We love ika but we thought it wouldn’t be a big seller because of Americans’ lack of familiarity with eating raw squid. Luckily we make most decisions based on flavor and not popularity.

Welcome Monique to the Instagram! Her newest staff pick is an iconic producer from the horse shoe shaped region of Mosel, Germany. Joh. Jos. Prum continues to set the bar for Riesling, a killer food pairing wine. The Graacher Himmelreich Spatlese is aromatic, off-dry & elegant with notes of stone fruit & vanilla. We love to drink it with everything from our sweetbreads to our spicy lamb ribs.
