Some dishes reveal themselves all at once. This one takes its time.
It begins with grilled Corvina and shrimp, bringing the flavors of the sea to the plate. Look underneath and the story continues with black squid ink ravioli filled with crab, all brought together by a creamy Ají Amarillo Sauce.

But there’s a detail you might not expect. A touch of anise liqueur finds its way into the Clementine sauce, adding a distinctive aroma to a dish where Mediterranean and Pacific influences come together.
