Bad Company 003: Chef Pablo Zitzmann of Zitz Sum is bringing Zitz Sum’s pantry to our pit for one night. Michelin Bib Gourmand. James Beard Best New Restaurant semifinalist. Cooking in our kitchen.

Ponzu, mamey, gochujang and mentaiko, run through our smoke. Nine dishes, cooked once. When the night’s over, the menu’s gone.
