After months of planning, Fiskebar arrived in Miami for a two-night pop-up at Krüs, serving an à la carte menu for sixty guests each evening.
The idea seemed simple enough.
Fly to Miami. Find some fish. Cook dinner.
As it turned out, the fish part was slightly more complicated.
The first day was spent meeting suppliers, looking at what was being landed fresh by hook and line, and trying to work out what might eventually make it onto the menu.
There were plenty of options, plenty of opinions, and just enough uncertainty to make things interesting.
Meanwhile, Chef Sebastián and the team at Krüs were doing their best to make a group of slightly jet-lagged chefs from Copenhagen feel at home.
Fortunately, everyone seemed to get on rather well.
By the end of day one, there were still questions to answer and dishes to figure out. But there was also a growing stack of beautiful seafood, a kitchen full of ideas, and a feeling that the week ahead could be something special.
