Nino on catering to a multicultural clientele, as the food and beverage manager of a hotel in Kuala Lumpur 🇲🇾, “I had to learn quickly about all the culinary customs and traditions of the various ethnicities. Consider this: in a Muslim diet, pork is strictly forbidden, so the majority of Malay dishes tend to be of beef or chicken. However, beef is never eaten by Hindus, to whom the cow is sacred. Pork remains the favorite meat of the Chinese. The Malay curries make great use of the omnipresent coconut and seldom include the yogurt so much favored by the Indian cooks. To the Chinese the sweet and sour flavor takes preference over the curry. And so it goes. The blend of spices is endless, and cooks are always turning out exciting combinations. The Spritz is now one of the ten bestselling cocktails at bars and restaurants in the U.S. and is increasing in popularity faster than other top ten! The Spritz was born in the Veneto region of Italy 🇮🇹. In the 1800’s, Austrian soldiers in the region couldn’t handle the strength of the wine🍷 so they would dilute it with a little water,💧or what the Germans called a “spritz.” Here’s our signature spritz, the Pirlo Spritz: Santa Margherita DOCG, Aperol and club soda. Another one of our signature desserts is Mixed Fresh Berries🍓🫐 with tasty marsala wine zabajon. It’s served in a delicate caramel nest. Zabajon is an Italian custard made with sweet wine.🍷 If you’ve never tried it, this dessert is a great introduction!

Nino on converting his hotel restaurant in Brussels into a medieval attraction, “On the Alitalia flight to Milan from Caracas, I picked up the airline magazine. An ad about Bunratty Castle in Bunratty, five miles from Shannon Town, Ireland, caught my attention. They were using the medieval castle for special events and for tourist groups. They staged medieval-style dinners with period entertainment, décor, and food. I thought that was a good idea. When I arrived in Brussels I was greeted by staff members I knew and by new ones. I started immediately to make phone calls to Ireland, and in a few days I was on my way to Shannon Town to contract for a package deal for a year which included artists, stage production, singers, minstrels, cooks, decorators, uniforms, and waiters. The hotel restaurant was converted into a medieval attraction.
